Well Toei isn't producing the story it's Oda if anything Oda should give Sanji respect.

I know Oda is producing the story and Toei is animating the manga. There is certain parts where they made sanji look like a weakling, like when pekoms hit him and he passed out which never happened in the manga, meaning it's a filler to slow down the pacing. Oda buffed sanji in the latest chapters.
